Grenache, Cinsault, Mourvèdre. Originally from Normandy, Sébastien Chatillon became the sommelier of Le Chateaubriand, consistenly placed as one of the best restaurants in the world, at the young age of 25. Working at Chateaubriand helped Sébastien dive deep into the world of natural wine and there was absolutely no turning back. He created Ad Vinum in 2016 and has been making inspiring wine ever since. Bim is slang for “word”/“dope”/“bet”, and this wine was created to commemorate the natural wine festival called Bim that he also started. Complex and soulful this wine is filled with crunchy black fruit and violets. Sébastien is a name to watch out for!
