His idea is to make wines in a similar style to Penet-Chardonnet, "not necessarily of lower quality, but more accessible," he says. Like the wines of Penet-Chardonnet, these are ripe, full-flavored champagnes, released with low dosages, or no dosage, but having plenty of depth and character to compensate.
